milk scalding at high altitude question
I've decided to just scald all milk that will be frozen as I don't have time for a lot of experiments before Beatrix will have to have the milk.
I live at a bit above 5000 feet and water boils at around 180/190F here. Does anyone know what the appropriate temperature for scalding milk would be? I have looked online and can't find anything.
I see in the lipase sticky the thing about 145F for 1 minute or 163 for 15 seconds, but I'm assuming that's at sea level?
