    Default How long can scalded milk sit out before refrigerating?

    I scald my milk due to excess lipase enzymes. Today I scalded 3 oz and then set it in a cup of cold water to cool down. 2 hours later I remembered to put it in the fridge. Do you think it is still ok to feed my baby in a few days since it wasn't refrigerated immediately??

    it's probably fine, but i'd probably try to use it sooner than later - i'd rather bump an older bottle already in the fridge for tomorrow, for example. the Womanly Art of Breastfeeding suggests using commonsense food handling rules (assuming a healthy term infant) and that falls within my own commonsense food handling rules - i will often refrigerate and eat later leftovers that sat out for 2 hours. others may be more conservative. but it's easy to tell by smell or taste if milk has gone bad, so there's no risk to saving it and trying.
