I hired a nanny for when I went back to work full time when my son was 8 weeks old (too soon, as well). I really want to encourage you that YOU are the employer and that your rules (as long as they don't totally disrespect the employee) go. It'll probably take more education of your nanny, especially if she's had experience with formula fed babies, but there's no reason not to expect this kind of approach to child raising.
We went through an agency in Seattle, and I was just super clear on what I wanted and they helped me find someone (for a fee). It may take a little more time and research and investment, but it's definitely do-able. My son has had three different nannies due a variety of issues, and all have basically done what we wanted for him.
